There’s not a single day that goes by that I don’t wish I had Indian food. And sushi. And more sleep. In fact it is only 10 pm and I’m already thinking of going to bed tomorrow. Anyhoo, I have always longed for someone to teach me the traditional art of Indian cooking. Alas, it has not happened. So I must be creative and out of that, came these meatballs.
For the Meatballs:
- 1 lb. ground turkey
- 1/4 cup breadcrumbs
- 1/4 cup diced onion
- 1 clove of garlic minced
- 1 tablespoon of chopped cilantro
- 1 tablespoon curry powder
- 1 teaspoon of black pepper
- pinch of cinnamon
- salt to taste
For the Sauce:
- 1 8oz can of tomato sauce
- 1 cup heavy cream
- One medium onion, diced
- 2 cloves of garlic, minced
- 1/2 small jalapeno, seeds and ribs removed, diced
- 2 teaspoons cumin
- 2 teaspoons paprika
- 1 teaspoons garam masala
- 1/2 teaspoon salt
- black pepper to taste
Mix all ingredients in a bowl with your hands. Do not over mix, or your meatballs will be tough. No one likes tough balls. Wait, I didn’t say that. Carrying on!
Sometimes, I’ll take a little bit of the mixture and cook it to check my seasonings. But there’s not always time for such nonsense!
Roll your mixture into balls about the size of golf balls. Heat oil in a pan. Once hot, add the meatballs. When you have seared one side, roll them over to sear the other side. You don’t want to cook them through. Just get the outside toasty browned. When all of the meatballs have been seared, remove them from the pan and set aside.
To the the pan add onion and jalapeno. If you need to add a smidgen more oil, go ahead. I’m not looking. Saute until soft, about 3-5 minutes. Add your spices and garlic, and saute another 2 minutes.
Add your can of tomato sauce. Let simmer for 5 minutes. Add your cream and stir until combined. Turn off your stove top and transfer your sauce to a food processor or use an immersion blender to puree the sauce. Put the sauce back in your pan. Test your seasonings with a clean spoon. Try to resist drinking it with a straw.
Place the meatballs you set aside into the sauce. Turn the heat back on and simmer until the meatballs are cooked through.
